Just like toddlers themselves, English muffins are cute and little. Because of their size, English muffins form a perfect base on which to build a toddler's lunch that is just filling enough. Whether you are making lunch at home or packing a lunch for your toddler to bring to preschool, use English muffins to make a variety of sandwiches and other foods that your toddler will love. For an extra healthy meal, look for English muffins that are whole grain or whole wheat.

English Muffin Pizzas

Pizza is a perennial favorite for most kids but can be too heavy for a toddler's lunch. Lighten up with a mini-pizza made on an English muffin, suited precisely to your toddler's tastes. It's a great way to use up stale English muffins. Make a standard pizza with tomato sauce and cheese, adding whatever vegetables your toddler likes. Bake or broil it in the oven or toaster oven until the cheese is melted. If your toddler has a more adventurous appetite, place a layer of spinach under the cheese. Vary the recipe by using pesto sauce and feta cheese.

Sandwiches

English muffins are the perfect size for a sandwich for your toddler. If you have a fussy eater on your hands, simply place sliced cheese on one half of an English muffin and serve. Make a simple veggie sandwich with cheese, lettuce, tomato, cucumber, mustard and creamy dressing, or create a tuna melt on an English muffin. If your toddler craves variety, make a more exotic sandwich by spreading avocado on one half, and adding grilled vegetables and lettuce. Spread cream cheese and smoked salmon on an English muffin for a lunch that your toddler might share with you.

English Muffins and Eggs

Although scrambled eggs might be a traditional breakfast food, placing them on top of one half of an English muffin makes a hearty and delicious lunch for your toddler. Similarly, place a fried egg with tomato and avocado on an open English muffin for a protein-filled lunch that will satisfy your toddler and give him plenty of energy.

English Muffins and Fruit

Make a sweet treat using English muffins and fruit. Toast an English muffin and spread flavored yogurt on each half. Top it with strawberries, blueberries or any other fruit for a delicious lunch that your toddler may mistake for dessert. Place apple slices on an English muffin, top with some cheese or mild cheddar and bake or toast until the cheese is melted.
