Thirty Minute Boneless Chicken Meals

Boneless chicken breasts cook in a snap, making them a great go-to meal for a quick and easy weeknight dinner. If you need to put a meal on the table for your family in 30 minutes or less, boneless chicken breasts can help you do it. You can make a variety of meals using versatile chicken breasts, cooked any way you prefer.

Grilled Chicken

Baste a couple of boneless chicken breasts with olive oil, sprinkle them with salt and pepper and toss them on the grill. In about 15 minutes, the chicken will be perfectly cooked. Serve the chicken with a side of brown rice and steamed vegetables, or shred and toss the grilled chicken with pasta, cheese and tomatoes for a hearty one-dish dinner. You can also serve the warm grilled chicken sliced on top of a leafy green salad with creamy Caesar dressing.

Chicken Salad

Poach boneless chicken breasts quickly by placing the meat in a small saucepan and covering the chicken with a combination of water and white wine. Toss in any herbs you like, such as bay leaves and thyme. Bring the water to boil, then place the lid on the pot and remove it from the heat. Let it sit for 15 minutes and you'll have perfectly poached chicken ready for homemade chicken salad. Shred or dice the chicken and toss it with mayonnaise or ranch dressing, along with any variety of vegetables, such as diced celery or avocado. Serve the chicken salad on bread or scooped on top of a healthy green salad. Serve fresh vegetables alongside the chicken for a complete healthy meal.

Kebabs

Cut whole boneless chicken breasts into bite size chunks for some fun and quick-cooking kebabs. Thread the chicken onto metal or wooden skewers, alternating the meat with vegetables, such as cherry tomatoes or chopped bell peppers. Grill the skewers or roast them in a hot oven. For more flavor, drizzle the cooked meat and vegetables with vinaigrette or a purchased pesto sauce. Serve the kebabs warm with a healthy grain, such as couscous, on the side.

Casserole

Make a chicken casserole in the oven in just half an hour using boneless breasts. Place the chicken in a large lasagna dish and cover the meat with any type of sliced vegetables, such as mushrooms and zucchini. Pour canned tomatoes or tomato sauce over the entire dish and bake it at 450 degrees Fahrenheit for half an hour. Serve with warm, crusty French bread your family can use to sop up the tasty sauce, and a healthy, tossed green salad with creamy dressing.
