When you think of turkey meals, the traditional holiday dinner comes to mind. You needn't search long, however, to find other ways to quickly and conveniently prepare delicious turkey meals for your family. Don't be afraid to incorporate filling and protein-rich turkey into casual weeknight meals. One of the best things about preparing turkey is that it typically yields leftovers, which you can easily turn into subsequent dinners.

Turkey Chili

If you're looking to cut calories without sacrificing flavor, substitute ground turkey for ground beef when making chili. Prepare the meal by sauteing garlic, onions and ground turkey in a heavy pot. Add tomato paste, stewed tomatoes, kidney beans, chili powder and salt and pepper then bring it to a boil. Reduce the mixture to a simmer for 30 minutes then ladle the chili into individual serving bowls. Top the chili with avocado slices, sour cream and shredded cheddar cheese. Serve chili with corn bread and a fresh salad tossed with creamy dressing.

Turkey Casserole

Turn leftover roast turkey and stuffing into a tasty casserole. Create a creamy sauce with cream of mushroom soup, sour cream and seasonings to taste. Assemble layers of shredded turkey, stuffing, frozen, thawed green beans or peas, and the sauce in a casserole dish. Bake the casserole until the sauce is bubbling around the edges and serve it with a garden salad.

Turkey Soup

Hearty turkey soup is just as soothing and satisfying as its chicken counterpart. To create this savory soup, saute celery, onions and carrots in a heavy stockpot. Add chicken broth; roasted, shredded turkey; and seasonings, such as thyme, rosemary, parsley and bay leaves, to taste. Simmer the soup for one to two hours to allow the flavors to mingle and serve over wide egg noodles.

Spicy Turkey Burritos

Put leftover roasted or rotisserie turkey to good use as burrito filling. Start the spicy dish by simmering sauteed garlic and onions, diced tomatoes, green chilies, freshly squeezed lime juice, shredded turkey and black or pinto beans in a saucepan. Season the mixture with chili powder to taste and spoon onto flour tortillas. Sprinkle shredded cheddar cheese over the tortillas and roll them up. Serve the burritos with sour cream, salsa and avocado slices. A simple salad with creamy chipotle dressing will complete the meal.
